Avocado and turkey quesadilla

  • 150 g Turkey breast, cooked and sliced

  • 150 g Cherry tomatoes
  • 1 handful Coriander, fresh

Ingredients

• 4 wholemeal tortilla wraps
• 1 avocado
• 150 g/ 0.33 lb turkey breast (cooked and sliced)
• 150 g/ 0.33 lb cherry tomatoes, chopped
• 2,5 dl/ 1 cup grated cheese
• handful of fresh coriander
• black pepper

Directions

• Assemble the quesadillas by layering half of each tortilla wrap with avocado, turkey, chopped cherry tomatoes, coriander, grated cheese and a pinch of black pepper.
• Fold each tortilla wrap over and fry in the grill or in a frying pan.
• If using a pan, choose a dry non-stick frying pan and fry the quesadillas on a medium heat, so that after about a minute and a half on each side you are left with a really crispy outside and an oozy filling.
• Serve the quesadillas cut into quarters.
