    • 1 lb Bacon

    • 5 1/2 lb Brussels sprouts
    • 3/4 cup Cranberries, dried sweetened
    • 1 Onion, small
  • Baking & Spices

    • 1 Salt/pepper
    • 1 tsp Sugar
  • Oils & Vinegars

    • 1 Olive oil, Extra Virgin
  • Dairy

    • 1/3 cup Bleu cheese crumbles
  • Liquids

    • 1 Water

  • 11/2 lbs. Brussels sprouts; shredded
  • 1 small onion; thinly sliced
  • 1 lb. bacon; cooked and crumbled (reserving 2 tbsp. fat)
  • 3/4 cup dried sweetened cranberries; roughly chopped
  • 1 tsp. sugar +/- to taste
  • 1/3 cup bleu cheese crumbles
  • Water (between 1/4 and 1/3 cup)
  • Extra virgin olive oil
  • Salt/pepper to taste

Directions

  • In a skillet, over medium-high heat, cook the bacon.
  • Once cooked, remove from pan, drain but reserve about 2 tbsp. of rendered fat.
  • Set the bacon aside and crumble.
  • Using the reserved bacon fat, sauté the onions for four minutes over medium-high heat.
  • Add the Brussels sprouts and cook for an additional five minutes.
  • Add olive oil, if needed.
  • Add the bacon back in.
  • Sprinkle the sugar, salt, and pepper, and add the cranberries. Mix well.
  • Add water, bringing up the fond or stuck on bits at the bottom of the pan.
  • Remove from heat. Add the blue cheese. Serve and enjoy.
