Baked Cod in Breadcrumbs

  • 1 Lemon, wedges

  • 1 oz Plain flour

  • 100 g Golden breadcrumbs

  • 4 X4 ounce frozen cod fillets

Directions

• Thaw the cod fillets.
• Preheat your oven to 350°F.
• Grease two baking sheets with a little vegetable oil. Beat the egg white with two tablespoons of cold water.
• Then sprinkle the flour onto one plate, and the breadcrumbs onto another plate. Season the flour with salt and pepper.
• Lay the cod fillets in the flour and coat them on both sides. Dip them in the egg white, and then coat them in breadcrumbs on both sides. Lay the coated fillets on to baking sheets.
• Place the fillets in the oven, and bake for about 20 minutes. When the flesh becomes flaky, the dish is ready to be removed from the oven.
• Serve with the lemon wedges.
