Beet, ginger and coconut soup

• Produce

  • 2 Beets, large red
  • 3 cloves Garlic
  • 1 tbsp Ginger, fresh
  • 1 Yellow onion, medium

• Canned Goods

  • 1/4 cup Coconut milk, full-fat
  • 4 cups Vegetable stock - you may have to use

• Baking & Spices

  • 1 tsp Sea salt

• Oils & Vinegars

  • 1 tbsp Coconut oil, unrefined

• Other

  • optional - juice and zest of ½ lemon
