    • 2 Cans Tinned tomatoes
    • 4 Tomatoes
  • Refrigerated

    • 2 Eggs, large
    • 2 Eggs
  • Condiments

    • 1/2 tsp Balsamic vinegar
    • 1 For the bbq sauce
    • 1 For the mayo
    • 1 For the tomato ketchup
    • 3 tbsp Honey
    • 2 tsp Mustard

  • • 900g Chicken Breast (cut into strips like kfc crispy strip size)
  • • 85g Coconut Oil
  • • 2 Large Eggs
  • • 340g Almond Flour (extra 50g for rolling the chicken in so the egg sticks to the chicken)
  • • 1 tsp Paprika
  • • 1 tsp Garlic Powder
  • • ½ Tsp Dried Thyme
  • • 1 Tsp Chilli Powder
  • • Salt & Pepper
  • For the chips (Prep time: 5 minutes, Cook Time: 30 minutes)
  • • 2 sweet potatoes, sliced
  • • 2 tsp dried thyme or rosemary
  • • 2 tbsp olive oil
  • • Salt and pepper to taste
  • • Smoked paprika (optional)
  • Sauces
  • For the BBQ Sauce (Prep time: 5 minutes, Cook Time: 30 minutes)
  • • 4 Tomatoes
  • • 1 Onion
  • • 1Tsp Garlic Puree
  • • 1 Apple (sliced and diced)
  • • 1Tsp Chilli Powder
  • • 1Tsp Paprika
  • • 1Tsp Coriander
  • • ½ Tsp Balsamic Vinegar
  • • ½ Tbsp Coconut Oil
  • • 2Tbsp Apple Cider Vinegar
  • • 3Tbsp Honey
  • • Salt & Pepper
  • For the Mayo (Prep time: 20 minutes)
  • • 2 Eggs
  • • 1Tbsp Apple Cider Vinegar
  • • 2Tsp Mustard (depends how strong you like your mayo on which mustard to use)
  • • 680g Extra Virgin Olive Oil
  • • Salt & Pepper
  • For the Tomato Ketchup (Prep time: 5 minutes, Cook time: 45 minutes)
  • • 2 Cans Tinned Tomatoes
  • • 4Tbsp Coconut Oil
  • • 1 Onion, Chopped
  • • 1Tbsp Garlic Puree
  • • 1Tsp Basil
  • • ½ Tsp Chilli Powder (for a spicy version)
  • • Salt & Pepper

Directions

  • Heat your Grill pan and add some Coconut Oil where you will be placing the chicken strips. 2. Mix the dry ingredients in a bowl and make sure they are well mixed. Whisk eggs in a high sided bowl. Pour the flour onto a plate.
  • Dip the chicken into the flour first and then the eggs. Add the chicken into the previously mixed dry ingredients. Place the chicken on the Grill pan and cook until they are golden brown.
  • For the sweet potato fries
  • Peel the sweet potatoes and slice them.
  • Place them into a baking tray lined with parchment paper
  • Sprinkle olive oil and spices all over
  • Bake the sweet potato chips for about 30 minutes
  • Test with the tip of a knife to see of theyre ready
  • For the BBQ Sauce
  • Roughly chop the tomatoes, onions, and apple.
  • Add all ingredients to a thick bottomed pan. Cover and simmer on medium heat for about 30 minutes. You want it simmering, but not boiling as you want it to reduce and come together.
  • After 30 minutes, all of the ingredients should be cooked and it should look like a lumpy sauce.
  • At this point, turn the heat off and use any blender to blend the sauce.
  • You can use a stick blender or a food processor either way they both do the same job but we found you get a smoother sauce using the food processor.
  • For the Mayo
  • Firstly add the eggs, vinegar, salt, pepper and mustard into the food processor on a slow setting.
  • While the machine is still spinning, very slowly add the oil. Keep adding oil until it is all in the food processor.
  • Now keep your food processor on until the eggs and oil have formed a thick gloopy Mayonnaise. It should just look like what you get in a jar of Hellmann’s. If not, then you need to start again.
  • For the Tomato Ketchup
  • Melt the coconut oil in a thick bottomed saucepan and then add the onion. Fry for a couple of minutes until soft and colourless. Add the rest of the ingredients.
  • Bring to the boil and then simmer between 40-45 minutes.
  • When ready grab your blender if you have an immersion one but also you can wait until the mixture is cool and pour the mixture into a food processor which also makes for a smoother sauce.
