Blue Cheese and Bacon Pizza

Ingredients

• 3 tablespoons butter
• 3 tablespoons all-purpose flour
• ¾ cup milk
• salt, pepper and freshly ground nutmeg, to taste
• 1 lb pizza dough
• ½ lb bacon, cooked and chopped
• ⅔ cup blue cheese

Directions

• Place a pizza stone in the oven and preheat to 475-500ºF. Let the stone heat for at least 30 minutes.
• Meanwhile, make the béchamel. Melt the butter in a saucepan. Add the flour and whisk, making sure there are no clumps. Allow the mixture to cook for at least 1 minute. Whisk in the milk and season to taste with salt, pepper and a bit of freshly grated nutmeg. Continue to cook until slightly thickened.
• Roll the pizza dough on a sheet of parchment paper. Spread the béchamel evenly over the pizza. Top with the bacon and the blue cheese. Transfer to the oven and bake until the crust is cooked, 8-10 minutes.
