Blueberry Cream Cheese Frosting

Ingredients

• 1 cup unsalted butter, softened
• 8 ounces cream cheese, softened
• 1 teaspoon pure vanilla extract
• 4 cups confectioners sugar
• 1.2 ounce package freeze dried blueberries, crushed

Directions

• Using stand mixer with paddle attachment, cream together butter and cream cheese. Just when you think its well blended, scrape sides and continue mixing for another 2-3 minutes. Add in vanilla and mix well.
• Add confectioners sugar, 1 cup at a time, mixing well after each addition. Be sure to start off mixing slow and then increasing speed so you dont make a big mess.
• Add crushed freeze dried blueberries and mix well.
• Makes enough for a mountain of frosting on 12 cupcakes or a moderate amount on 24 cupcakes.
