Make any day a celebration with Champagne White Truffle Surprise.

Ingredients

  • 1/4 cup water
  • 1 cup sugar
  • 1 cup fresh cranberries
  • 1/2 cup champagne
  • 2 cups white chocolate, chopped
  • 1/4 cup heavy cream
  • 1/4 cup butter, room temperature
  • 3 cups white chocolate wafers

Directions

  • In a large sauce pan, bring 1/4 cup sugar and water to a boil until all the sugar is dissolved. Remove from heat and in small batches, coat cranberries. Place on wire rack to dry for an hour. Place remaining sugar in a bowl and in batches roll the cranberries until coated. Place back on wire rack until ready to use.
  • In small sauce pan pour in the champagne, bring to slight boil and reduce heat to simmer for approximately 10 minutes or until mixture is reduced by half. Set aside to cool until ready to use.
  • In a small saucepan, pour in the heavy cream and bring to a boil over medium heat. Place the 2 cups of chopped white chocolate in a bowl and pour over the cream. Let rest for a minute to melt the chocolate and stir until smooth but thick.
  • Pour in the reduced champagne and still until combined. Add the butter and stir until smooth. Place plastic wrap over the mixture to it comes in contact with the top. Place in refrigerator for approximately 30-45 minutes until the mixture is firm enough to scoop.
  • Use a small scoop to form a have ball and place a sugared cranberry inside. Work the mixture so that is covered the cranberry and place on a parchment line baking sheet. Once all the balls are formed place back in the refrigerator for an approximately 20 minutes.
  • Melt the 3 cups of chopped white chocolate wafers over a double boiler and dip the formed balls until they are coated with chocolate. Return back to the refrigerator to set for at least 10 minutes before serving.
