Individual cheddar barbecue meatloaves made in a muffin tin

Directions

  • Preheat oven to 400 degrees
  • In a large bowl, mix all of the ingredients together, except for the cheddar cheese, and form into large ball
  • Fill the muffin tin with the meat mixture
  • Bake for 20 to 25 minutes, and remove extra juice if desired
  • Brush tops of muffins with barbecue sauce, and sprinkle cheddar cheese over the sauce
  • Return to the oven, and bake until cheese melts and internal temperature is at least 160 degrees
  • Serves: 12 muffins
