Add a Tex-Mex flair to your next summer BBQ! This Chicken Burger is LOADED with flavor, grilled to perfection, piled high with smashed avocado and smothered in chipotle mayo...perfect recipe for the grilling season!

Ingredients

  • 2 lbs ground chicken
  • 1/2 cup onion, grated
  • 4 garlic cloves, minced
  • 2 teaspoons smoked paprika
  • 1/2 cup cilantro, chopped
  • Liberal grinding of salt and pepper
  • 1/2 cup mayonnaise
  • 1 chipotle pepper in adobo sauce
  • 1 teaspoon adobo sauce
  • 2 tablespoons lime juice
  • 1 tablespoon chopped cilantro
  • 1 jalapeño, seeded and chopped
  • 2 tablespoons, red onion, chopped
  • 2 tablespoons lime juice
  • 2 avocados, peeled and coarsely smashed
  • 1 tablespoon cilantro, chopped

Directions

  • Combine all ingredients and mix together. Do not overmix!
  • Create 6 patties, refrigerate for at least 15 minutes to keep them from falling apart on the grill.
  • Cook for 4-5 minutes each side.
  • Combine all ingredients in a food processor and mix to blend. Refrigerate until ready to serve.
  • Combine jalapeño, red onion and lime juice; allow to sit for a couple minutes to soften the bite of the jalapeño and red onion.
  • Add avocados to mixture; coarsely smash them into chunks.
  • Stir in cilantro.
  • Add cooked burger to bun
  • Top chicken burger with smashed avocado.
  • Spread chipotle mayo on the inside of the other half of the bun and place on top of the smashed avocado mixture.
