Quick & Easy Vegan Recipes

Ingredients

  • 2 Cups Cooked Chickpeas (1 19oz Can)
  • 2 Stalks of Celery
  • ¼ of a Medium Red Onion
  • 3 Tablespoons Vegan Mayonaise (Such as Vegenaise)
  • 1 Tablespoon Dijon Mustard
  • 2 teaspoons Capers (optional)
  • ¼ teaspoon Salt
  • Several Grinds of Pepper
  • Lettuce or other toppings
  • Slices of Bread or a Tortilla
  • Several tablespoons Cashew Ricotta (Click for link to recipe)
  • Several Slices of Cucumber
  • Slices of bread or a wrap
  • Fresh ground pepper (optional)
  • Use the following recipe for Tofu or Tempeh Bacon, or you could use one of my recipes from 5 Vegan Bacon Recipes! (Click for link to recipe).
  • ½ Block Tempeh or Tofu
  • 2 Tablespoon Maple Syrup
  • 1 Tablespoon Soy Sauce
  • 1 Tablespoon Olive Oil, plus more for frying
  • 1 teaspoon Liquid Smoke
  • ¼ teaspoon Garlic Powder
  • ¼ teaspoon Paprika
  • Several Slices of Tomato
  • A Few Leaves of Lettuce
  • Vegan Mayonnaise (such as Vegenaise)
  • Slices of Bread or a Tortilla Wrap
  • ½ Block Extra Firm Tofu
  • 1 Stalk Celery
  • ½ Small Red Pepper
  • 2-4 Tablespoons Chopped Red Onion
  • ¼ Cup Vegan Mayonaise (such as Vegenaise)
  • 1 Tablespoon Dijon Mustard
  • 1 teaspoon Capers (optional)
  • ½ teaspoon Turmeric
  • ¾ teaspoons Black Salt or Sea Salt
  • Several Grinds of Pepper
  • Slices of Bread or Tortilla
  • Your favourite veggies for topping.
  • Several tablespoons Peanut Butter or Almond Butter, Hazelnut Butter, (click for recipe), or any nut butter of your choice
  • Several tablespoons strawberry, cherry, blueberry, or your favourite jelly
  • A couple slices of bread

Directions

  • Drain and rinse chickpeas thoroughly. The more you rinse, the less, er… musical, these beans will be!
  • Toss them into a food processor and pulse several times. Or could also do this with a fork or potato masher if you don’t have a food processor.
  • Chop up celery and the red onion and add to the food processor.
  • Add the rest of the ingredients into the food processor and pulse several times to combine.
  • Spread on bread or in a wrap and top with your favourite veggies.
  • Just spread the bread or wrap with a thick, delicious layer of Cashew Ricotta, top with cucumber slices and a grind of pepper.
  • If using the tempeh, slice as thinly as you can without the slices falling apart. Steam the slices in a steamer basket for 10 minutes. (This removes the bitterness of the tempeh).
  • If using the tofu, slice thinly.
  • Mix all the marinade ingredients together in a bowl or flat shallow dish: maple syrup, soy sauce, olive oil, liquid smoke, garlic powder, and paprika.
  • Add the tofu or the tempeh to the marinade and let it hang out for 10 minutes minimum, or as long as overnight.
  • Heat olive oil in a pan and fry the tofu or tempeh for about 8 minutes per side or until browned and crispy. As the strips cook keep spooning the leftover marinade on top until you run out. The marinade will turn into a sticky glaze that will taste extra amazing!
  • To serve, spread a slice of bread or tortilla with vegan mayonnaise, top with lettuce, tomato and the tempeh or tofu bacon. Devour.
  • Break the tofu into chunks and put in food processor. Pulse several times so that it is broken into crumbles. You could also do this with a fork or potato masher if you don’t have a food processor.
  • Chop up the celery, red onion, and red pepper and add to food processor.
  • Add the vegan mayonnaise, mustard, capers if using, turmeric, salt and pepper to the food processor as well and pulse until all mixed up and delicious.
  • Spread onto bread or a wrap and add your favourite veggies.
  • Am I writing a recipe for a PB & J? Yes I am. This often over looked sandwich is so comforting and classic, or you can get your fancy pants and jazz it up with different nut butters, and all sorts of nice jellies. A note when buying jelly, pectin is vegan, gelatine is not.
  • Ok so you know what to do, spread your bread or toast (I like toast because it gets the nut butter all melty), with the nut butter and jelly. Then dive in.
  • Serves: 2-3 Sandwiches
