Coconut Oatmeal Chocolate Chip Cookies – one of the best oatmeal cookie recipe that I ever tried. Made of almost 2 cups of oatmeal, sweetened coconut, chocolate chips, peanut butter chips and delicious walnuts. Mmm-mmm good!

Ingredients

  • 1 cup butter, room temperature
  • 1/2 cup brown sugar
  • 1/2 sugar
  • 1 large egg
  • 1 cup flour
  • 1/2 teaspoon baking soda
  • 1 1/2 cup oats
  • 1/2 sweetened coconut
  • 1/2 cup peanut butter chips
  • 1/2 cup chocolate chips
  • 1/2 cup chopped walnuts

Directions

  • Preheat the oven to 350F. Line baking sheet with parchment paper.
  • In the mixing bowl, using electrical mixer whisk egg and sugars for about 3 minutes, or until cream texture. Add butter, and give it a good whisk.
  • Add flour and baking soda and mix for about 1 minute. Stir in oats, coconut, chocolate chips, peanut butter chips, and walnuts, until everything is combined.
  • Form balls and place them on a baking sheet. Bake for 10-12 minutes. Enjoy!
