  • 1 (24 ounce) jar pickle spears
  • 2 cups panko bread crumbs
  • 1/4 cup freshly grated Parmesan
  • 1 tablespoon fresh parsley, chopped
  • 2 large eggs, lightly beaten
  • enough canola or vegetable oil to add to the fill line or 3-inches in a frying pan
  • 1 cup mayonnaise
  • 1 cup buttermilk
  • 1 teaspoon chives, chopped
  • 1 teaspoon parsley, chopped
  • 1 teaspoon fresh dill, chopped
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

Directions

  • Take pickle spears out of the jar and place on paper towels to absorb the liquid.
  • In a medium bowl stir to combine the bread crumbs, cheese and parsley.
  • In a small bowl add the eggs and lightly beat.
  • Dip dry pickle spears in the eggs then evenly coat with bread crumb mixture.
  • Set on a baking sheet for 10 minutes.
  • Heat oil to 375°.
  • When oil is ready add pickles.
  • Fry 3 to 5 minutes or until golden brown. You dont need to cook the pickles just get the outside nice and crispy.
  • Place fried pickles on a baking sheet lined with paper towels.
  • Add the mayo, buttermilk, chives, parsley, dill, garlic powder, onion powder, salt and pepper to a large jar; shake to combine.
  • Store in refrigerator until ready to use.
