Creamy Chicken Enchiladas

Ingredients

• 6 ounces cream cheese, slightly softened
• 1 small can diced green chilis
• 2 cups rotisserie chicken, shredded
• 1.5 cups shredded mexican cheese blend
• 8-10 corn tortillas
• 1 avocado, for garnish
• Cilantro, for garnish

Directions

• Preheat Griddler using smooth cooking plates (or warm a skillet instead) Combine cream cheese and green chilis Lightly brush the tortillas with oil Spread cream cheese mixture on top of half the tortillas Top with chicken and mexican cheese Top each tortilla with a second tortilla In batches, place quesadillas on Griddler and close lid Grill for 3-5 minutes, until cheese is bubbly Add avocado and cilantro as garnish and serve with salsa if desired
