Crock Pot Lasagna Soup

  • 1 lb Italian sausage, mild or hot

• Produce

  • 1/2 tsp Garlic powder
  • 1 Onion

• Canned Goods

  • 10 cups Chicken stock
  • 1 can Tomato paste

• Condiments

  • 1 jar Spaghetti sauce
  • 1 15 oz can Tomato sauce

• Pasta & Grains

  • 1 lb Spiral fusilli pasta

• Baking & Spices

  • 1 I tablespoon italian seasoning
  • 1 pinch Red pepper flakes
  • 1 pinch Salt and pepper

• Dairy

  • 1 Parmesan cheese, grated
  • 1 Ricotta cheese

Directions

• Brown sausage (removed from casings if using links) and chopped onion in a skillet
• Add to crock pot along with spaghetti sauce, tomato sauce (or diced tomatoes), tomato paste, and spices
• Add chicken stock. Be sure to leave room for pasta to be added to crock pot. It will seem quite liquid-y but remember that the pasta will absorb some of the liquid
• Stir, cover, and heat on high for 4 hours or low for 8.
• 30 minutes before serving time, turn crock pot to high (if it was on low) and add pasta.
• Serve with a scoop of ricotta cheese, if desired, and a sprinkle of shredded parmesan
