Crouton Parmesan Chicken

  • 1 lb Chicken, thin boneless skinless

  • 1 cup Parmesan

Ingredients

• 16 oz package of croutons
• 2 cloves garlic
• 2 sprigs fresh parsley
• 1 pound thin sliced boneless skinless chicken
• 2 eggs
• ½ cup flour
• ½ cup milk
• ½ cup olive oil
• 1 cup shredded parmesan

Directions

• Wisk together eggs and set aside, place flour in a bowl and set aside, place milk in a bowl and set aside.
• In your food processor combine croutons, cheese, garlic and parsley place on pulse until croutons are crumbled.
• Dip each piece of chicken in milk, next flour, egg, then your crouton mix. Repeat with each piece of chicken and set aside.
• Heath olive oil in a cast iron pan on a medium heat. Place a single layer of chicken in the pan. Allow to cook 2-3 minutes or until golden brown. Turn chicken over and allow to brown. Make sure your chicken is no longer pink on the inside or 160 F.
