Ingredients

  • 18-20 (500-550 g) slices whole-grain sandwich bread (use gluten-free if needed)
  • ½ cup (120 ml) aquafaba (juice strained from canned chickpeas)
  • 1 and ½ cup (360 ml) non-dairy milk of choice (I used almond)
  • 1 teaspoon vanilla extract
  • ¼ teaspoon stevia extract (I like NuNaturals) OR ¼ cup (50 g) healthy granulated sweetener (use erythritol or xylitol for a sugar-free option) OR 2-3 tablespoons (40-60 g) maple syrupFor the apple layers
  • 6 cups (750 g) chopped apples (you can peel them if you want, I prefer not to)
  • ½ teaspoon stevia extract OR ½ cup (100 g) healthy granulated sweetener OR 5-6 tablespoons (100-120 g) maple syrup
  • 2 teaspoons cinnamon
  • optional: ½ cup (60 g) walnuts or pecans
  • optional: ½ - 1 cup (80-160 g) raisinsOR use just half the apple filling AND

Directions

  • Preheat the oven to 350 (180 Celsius).
  • Grease a 9x9 inch square pan (or a similar-sized rectangular pan) with a little bit of coconut oil or prepare a nonstick one.
  • Combine all ingredients for the apple filling in a large bowl (as well as the quark filling if using, in a separate bowl) and set aside.
  • Mix the aquafaba, milk, vanilla and sweetener for dipping the bread in a medium bowl.
  • Dip in a first slice of bread (just quickly dip it in and take out, you want it to soak some of the mixture in but not get too soggy) and put inside the pan.
  • Repeat with the other slices until you cover the entire bottom of the pan - the idea is to place the bread slices right next to one another and not leave any gaps. Cut some slices to fit in if needed and dont be afraid to squeeze the bread a bit to fit in.
  • Once you have the first layer of bread, top it with half the apple filling (or all of it if using the quark filling too) and spread evenly. Push on the apples a bit to pack everything down a bit - I like to use the back of a measuring cup to do this.
  • Top the apples with another layer of dipped bread, then apple (or quark) filling and bread again. Your pan will probably look pretty full but you should be able to squeeze everything in if you push on the top some more.
  • If you like, brush a bit more coconut oil on the top bread layer and put the pan inside the oven.
  • Bake for 35-45 minutes or until the top turns golden and crispy.
  • Take out and either serve right away or let cool to room temperature.
  • Top with more apples, raisins, and nuts or pour on some maple syrup or healthy powdered sugar. Some healthy ice cream is also delicious with this pudding!
