Ingredients

  • 4 eggs
  • 80 g Hanpen (fish cake)
  • 1 tsp mirin
  • 2 tbsp sugar
  • A pinch of salt
  • 1 & ½ tsp concentrated Mentsuyu (can be found in Japanese/Asian specialty grocery stores)

Directions

  • Preheat your oven to 180c.
  • Put all the ingredients, except the hanpen, into a food processor/electric mixer.
  • Cut the hanpen into little cubes and add it to the mixer.
  • Mix all the ingredients together for about 1 minute.
  • Leave the mixture to settle until the bubbles go down.
  • Line a shallow baking tray (about 17 x 28 cm) with baking paper and pour the mixture in.
  • Bake in the oven for 20 minutes.
  • Once cooked, remove the Datemaki from the tray and while its still hot, roll it into shape with a sushi mat and secure it with a rubber band on each end to hold the shape.
  • Leave it for about 30 minutes then remove from the sushi mat and cut into even sized chunks and serve!
  • Serves: 8 slices
