Ingredients

  • 4 sweet potatoes (small-medium)
  • 1 Tbsp butter
  • 2 Tbsp olive oil
  • 1 tsp minced garlic
  • 2 Tbsp fresh basil, chopped
  • ½ tsp cinnamon
  • ¼ tsp nutmeg
  • salt & pepper

Directions

  • Preheat oven to 425 degrees.
  • Wash sweet potatoes and cut just a small portion off the bottom so it sits flat.
  • Using a sharp knife cut thin slits in the potato ¼ from the bottom.
  • Place on a baking sheet.
  • In a small bowl, melt butter.
  • Add in olive oil, minced garlic, fresh chopped basil, cinnamon, nutmeg, salt & pepper.
  • Pour over potatoes, pushing herbs down in some slits.
  • Bake for 40-50 minutes or until tender.
  • Serves: 4
