My friend Lori made this one day I was over her house, and since that day Ive craved cauliflower many times! If you struggle getting veggies into your kids, your husband, or yourself, try this recipe (minus the cayenne powder for kiddos) - they just might fall in love!

Ingredients

  • 1 head cauliflower, chopped or sliced
  • Coconut oil
  • Salt
  • Pepper
  • Cayenne powder

Directions

  • Preheat oven to 400 degrees. Chop or slice cauliflower head after removing stem and leaves. Lay flat on a baking sheet atop parchment paper or a Silpat. Bake for 40 minutes, flipping once. Try not to eat it all in one sitting!
