Summary: Although you can purchase Italian sausage, it goes without saying the homemade kind is better. Here we are using fennel, paprika, garlic and more, for an authentic Italian taste.

Ingredients

  • 2 pounds of ground pork (if you have a meat grinder, you could grind it yourself if desired)
  • 1 tbsp fennel seeds, ground
  • 1 tbsp sweet paprika
  • 1 tbsp hot paprika
  • 4-6 cloves garlic, minced or crushed (or more to taste)
  • 1 tbsp black pepper
  • 2 tsp sugar
  • 1 tbsp salt (sea salt or coarse ground salt is especially good here)
  • 3 tbsp of red wine or balsamic vinegar
  • red pepper flakes, to taste (anywhere from none for a sweet Italian sausage recipe all the way up to 1 or more tablespoons if you’d rather have a hot Italian sausage recipe)

Directions

  • This recipe makes 2 pounds of your own fresh, homemade Italian sausage - simply double or otherwise adjust the ingredients as needed if you would like to make a larger batch.
  • Preparing this Italian sausage recipe is simplicity itself: just mix all of the ingredients well and you are done! You can mix the ingredients by hand or with a food processor - whatever you prefer is fine.
  • You can now form the sausage into patties, links or crumble it to use on pizza, in lasagna or any other dish you like. If you would like to stuff them into sausage casings for the look of store bought sausage, simply do so.
  • Cook or freeze your sausages (if you are not using sausage casings, then separate the links or patties with waxed paper to prevent them from sticking together) and prepare yourself for requests for your recipe and admiration from your family and dinner guests.
