Easy Pea Soup with Lemon and Thyme

  • 1 Thyme, Leaves from Sprig of Fresh
  • 1 Thyme, fresh

• Condiments

  • 1/2 cup Lemon juice, fresh

• Baking & Spices

  • 1/4 tsp Pepper, ground
  • 1/2 tsp Sea salt
  • 1 Sea salt, flaked
  • 1 tbsp Sugar

• Oils & Vinegars

  • 2 tbsp Olive oil

• Dairy

  • 1 Creme fraiche

• Liquids

  • 1/2 cup Water

Ingredients

• 16 ounces Frozen Peas - thawed
• 1/2 Cup Fresh Lemon Juice (2-3 lemons)*
• Leaves from 1 Sprig of Fresh Thyme
• 1 Tablespoon Sugar
• 1/2 teaspoon Sea Salt
• 1/4 teaspoon Ground Pepper
• 2 Tablespoons Olive Oil
• 1/2 Cup Water (add more for a thinner soup)
• Crème Fraîche
• Flaked Sea Salt
• Fresh Thyme

Directions

• Process all soup ingredients in blender until smooth. (Using Vitamix - process on variable 7 until smooth then process on high for 30 seconds.) Serve cold or transfer to pot over medium/low until hot. Serve with salt, fresh thyme and crème fraîche.
