    • 2 2/3 cups Sugar
    • 1 tsp Vanilla extract

Ingredients

  • 1 cup Butter
  • 2 Cups Sugar
  • 1 cup Eggnog
  • 5½ cups sifted flour
  • 1 teaspoon baking soda
  • ¾ teaspoon Nutmeg
  • ½ teaspoon cinnamon
  • ⅔ cup sugar
  • ¼ cup corn starch
  • ¼ teaspoon salt
  • 3 egg yolks
  • 2 cups Eggnog
  • ½ Cup Semi-sweet chocolate chips
  • 1 Tablespoon Butter
  • 1 Teaspoon vanilla extract

Directions

  • Soften butter
  • combine butter and sugar in mixing bowl and beat until light and fluffy
  • Beat in Eggnog
  • Combine Flour, baking soda, nutmeg, and cinnamon in a separate bowl
  • Slowly add the flour mixture to the butter mixture and mix until a good cookie dough forms
  • Preheat oven to 375 degrees
  • Portion into small round cookies and place in a mini muffin tin
  • Use back end of small cookie scoop to indent the cookie into a cup shape
  • Bake 8-10 minutes or until set
  • If needed, reshape the cookie into a cup shape
  • Cool on a wire rack.
  • Slowly combine flour mixture with the butter mixture.
  • In a medium sauce pan, sift sugar and salt.
  • Add egg yolks and eggnog.
  • Begin heating on low heat
  • Add chocolate chips
  • Stir and continue to cook on medium heat until pudding consistency.
  • Allow to cool in fridge, stirring occasionally
  • Spoon into cooled Eggnog Cookie Cups
  • Top with Reddi-wip and your choice of toppings
  • Serves: 6 dozen
