Flourless Chewy Chocolate Chunk Cookies

  • 1 Egg, whole
  • 2 Egg whites

  • 2/3 cup Chocolate chunks
  • 3/4 cups Cocoa powder, unsweetened
  • 3 cups Powdered sugar
  • 1 tsp Salt

Ingredients

• 3 cups powdered sugar (check to make sure it is gluten free)
• 3/4 cups unsweetened cocoa powder
• 1 tsp salt
• 2 egg whites
• 1 whole egg
• 2/3 cup chocolate chunks

Directions

• Preheat oven to 350 degrees Mix together all dry ingredients until well combined. Add the egg whites and whole egg and mix and mix and mix. Dont worry, all the dry ingredients will incorporate together just keep mixing. Once fully combined stir in the chocolate chunks. Drop by scant tablespoons 2 apart onto a parchment lined cookie sheet. I used my medium 2 tsp size cookie scoop. Bake for 11-12 minutes at 350 degreees until the cookies are set on the outside and still chewy on the inside. Let cool on the cookie sheet for about 2-3 minutes then transfer to a cooling rack to finish cooling. (Ha! We were devouring these after the 2 minute resting time!)
