French Toast Cannoli Rollups

  • 1/4 cup Chocolate chips, mini
  • 1/2 tsp Cinnamon
  • 2 tbsp Powdered sugar + more
  • 1 tsp Sugar
  • 1/2 tsp Vanilla extract

  • 1/4 cup Milk
  • 1/2 cup Ricotta cheese

Directions

• In a large bowl, combine 1/2 cup Ricotta cheese, 1/4 cup of mini chocolate chips, 2 tbsp of powdered sugar, stir until mixed
• Cut the crusts off your slices of bread and flatten them with a rolling pin
• Take about a tablespoon worth of your filling and spread it onto the bread, repeat for all slices
• In a separate bowl whisk together 1 egg, 1/4 cup of milk, 1 tsp sugar, 1/2 tsp cinnamon, and 1/2 tsp vanilla extract
• Take your rolled up sliced bread with the filling, and dunk it into the egg mixture until it’s evenly coated
• Melt 2 tbsp butter on a skillet on high heat, add your rollups to the skillet and cook until browned on all sides, flipping when necessary, for roughly 5 minutes
• Remove rollups from pan, garnish with powdered sugar and serve warm
