I need cookies or bars that will ship (across country) well.  The last batch of cookies  I sent to my college freshman son ... was an epic fail.  He got a pile of crumbs!  He did not complain, he just said; my stomach didnt care.  I am hoping the high fat content of these bars will hold them together for shipping. This recipe is an adaption of Dorie Greenspans Classic Brownies from her Baking, From My Home to Yours cookbook.  These brownies are very fudgey, cool completely before slicing, if you can wait that long. Also, the dilemma in my house, not everyone likes nuts. I solve this issue by sprinkling nuts on top of half the batter before baking. Everyone is happy.

  • Espresso powder
  • Salt
  • All-purpose flour
  • Cinnamon
  • Walnuts

Directions

  • Pre-heat oven to 325 degrees. Line a 9 1/2 x 11 inch pan with foil and butter the foil. The foil should hang over the sides of the pan so that you can lift the brownies out of pan. (You MUST butter foil or the brownies will stick to foil.) Add butter and chocolate chips to bowl set over simmering water.  Whisk mixture as it starts to melt. After butter and chocolate are melt, whisk in sugar.  Now add eggs, one at a time.  Whisk the (wet ingredient) mixture after each egg. Add vanilla extract and espresso powder to chocolate mixture. Combine flour, salt and cinnamon in separate bowl. If you are adding chopped nuts to your brownies, add them to flour (or dry) mixture. (Or if you have my dilemma of some like nuts, some dont, sprinkle nuts over half the batter in pan just prior to baking.) Fold dry ingredients into wet ingredients. Spoon batter into prepared pan, spread evenly. Bake for 35-40 minutes. Cool completely before lifting from pan. Cut into 30 bars.
