    • 1 cup Cassava flour
    • 1 Cassava flour batter, Dry
    • 1/8 tsp Cayenne pepper
    • 1 1/4 tsp Paprika
    • 1 Salt
    • 1/4 tsp Salt

With true authentic south Louisiana flavor, these Gluten Free Cajun Fried Shrimp are heavy on flavor with a light, crunchy texture.

Ingredients

  • Quick Shrimp Marinade
  • 1 pound peeled and deveined large shrimp
  • ½ teaspoon lemon zest
  • ½ teaspoon black pepper
  • ½ teaspoon dried parsley flakes
  • Dry Cassava Flour Batter
  • 1 cup cassava flour
  • 1 tablespoon garlic powder
  • 1 teaspoon paprika
  • 1 teaspoon dried parsley flakes
  • salt, pepper, and cayenne pepper to taste
  • Egg Wash
  • 2 eggs
  • dash of Tabasco
  • 1 tablespoon milk or half-n-half
  • Oil
  • 1 cup of cooking oil of choice for frying
  • Homemade Cajun Tartar Sauce
  • ¾ cup mayonnaise
  • 2 tablespoons chopped dill pickles
  • ½ teaspoon Creole mustard
  • 1 teaspoon yellow mustard
  • ¼ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • ⅛ teaspoon cayenne pepper
  • ½ teaspoon lemon zest
  • ½ teaspoon lemon juice

Directions

  • Preheat oil to 350 degrees F.
  • Stir all homemade tartar sauce ingredients together in a small bowl with a fitted lid. Refrigerate.
  • Combine lemon zest, black pepper, and dried parsley. Coat shrimp with seasoning. Set aside.
  • In a separate bowl, beat eggs with Tabasco and milk.
  • In another bowl, stir all cassava flour batter ingredients until well-incorporated.
  • Dip and rest seasoned shrimp in egg wash for a few seconds, then coat with cassava flour mixture. Shake off excess gently.
  • Fry shrimp in small batches for 3 to 4 minutes per side, or until golden brown. Drain on paper towels.
  • Serve with homemade tartar sauce.
