    • 1/3 cup Lemon juice, fresh

    • 1/2 cup Olive oil

  • 6 Large Yukon Gold Potatoes, Sliced Into 1/4-inch Thick Rounds
  • 1/3 cup Fresh Lemon Juice, Plus The Zest From The Lemons
  • 8 cloves Garlic, Minced
  • 1/2 cup Olive Oil
  • 1 Tablespoon Dried Oregano, Preferably Greek Oregano
  • Kosher Salt

Directions

  • Preheat oven to 350ºF. In a large bowl, add the potato slices. In a bowl, whisk together lemon juice, zest, garlic, olive oil and oregano. Pour it over the potatoes. Toss potatoes to coat them. Spread potatoes on a sheet pan in a single layer and pour the extra lemon-oil mixture over the potatoes. Generously season with kosher salt. Roast potatoes at 350ºF for 1 hour until golden brown. Serve the potatoes hot or at room temperature.
