    • 1/2 cup Protein powder

    • 1/2 cup Almond flour
    • 1 1/2 tsp Baking powder
    • 1/2 tsp Baking soda
    • 1 tsp Cinnamon, ground
    • 1/4 cup Coconut sugar or brown sugar
    • 1 cup Oat flour
    • 1 pinch Salt
    • 1 tsp Vanilla extract
  • Nuts & Seeds

    • 1 Oats or chopped walnuts
  • Dairy

    • 1 cup Greek yogurt, nonfat

  • 1 cup oat flour
  • 1/2 cup almond flour
  • 1/2 cup protein powder (I suggest Vital Proteins Beef Gelatin or Manitoba Harvest Hemp Pro 70 in Vanilla -- you can also sub for more almond flour too!)
  • 1-2 teaspoons ground cinnamon (I like a lot!)
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon baking soda
  • pinch of salt
  • 1 egg
  • 1 cup nonfat Greek yogurt
  • 1/2 cup unsweetened applesauce
  • 1/4 cup coconut sugar OR brown sugar
  • 1 teaspoon vanilla extract
  • 1-2 medium-sized apples, diced small (again, I like a lot!)
  • extra oats or chopped walnuts for topping (optional)

Directions

  • Preheat your oven to 350 degrees and lightly grease a muffin pan with coconut oil OR line them with paper or silicone liners, and set aside. In a large mixing bowl, sift together the oat & almond flours, protein powder, cinnamon, baking powder, baking soda, and salt. Set aside. In a medium bowl, whisk together the egg, yogurt, applesauce, coconut sugar, and vanilla until well combined. Add the wet ingredients to the dry ingredients, mixing gently until just combined. Fold in the diced apples. Divide the batter evenly among the 12 muffin cups, filling them almost to the top. Add a sprinkle of oats or walnuts if desired. Bake the muffins for 20-22 minutes, or until top is firm to the touch and toothpick inserted into the center comes out clean. Allow the muffins to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
