Ingredients

  • 1.5 c oat flour
  • 1 c whole wheat pastry flour
  • 1 tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 tbsp graze chia seeds
  • 2 ½ tbsp lemon zest, freshly grated
  • 6 tbsp freshly squeezed lemon juice
  • 1 tbsp avocado oil
  • 3 flax eggs
  • ½ cup plain nonfat greek yogurt (unflavored or vanilla)
  • 3 tbsp honey
  • ¾ cup milk of choice

Directions

  • Preheat oven to 350
  • Make flax eggs and allow them to sit for 5 minutes. For one egg, combine 1 tbsp flax seed meal with 2.5 tbsp water. Stir and allow them to solidify
  • Combine flours, baking powder, baking soda, salt + chia seeds.
  • Stir in lemon zest, lemon juice, oil, yogurt, honey and milk
  • Pour batter in to greased muffin tins
  • Bake at 350 for 15 minutes until edges are golden brown
  • Serves: 12 muffins
