Ingredients

• 6 lemons, sliced zest, without pith
• 1 L vodka
• 3 cups sugar
• 600 ml water

Directions

• Combine zest and vodka in a sterilised sealable bottle. Store in a cool, dark place for 1 month. Shake container every few days.Combine sugar and water in a medium saucepan. Stir over a low heat 3-4 minutes, until sugar dissolves. Increase heat to medium; bring to the boil. Cook, without stirring, 5-6 minutes, until the syrup thickens.Strain vodka through a fine sieve and discard zest. Add to sugar syrup, stirring to combine. Pour into sterilised airtight bottles; seal.
