  • 1/2 cup uncooked whole wheat shells (or use elbow noodles)
  • 2 cloves garlic, peeled and roughly chopped
  • Sea salt
  • 1 cup cooked chicken, diced
  • 2 cups cooked (or frozen and thawed) broccoli florets
  • 1/2 cup plain Greek yogurt
  • 1/2 cup shredded cheddar cheese
  • Salt & Pepper to taste

Directions

  • 1. Boil the pasta along with the garlic in salted water according to package directions to reach al dente. When draining the pasta, reserve 1/2 cup of the cooking water. 2. Return the pasta and 1/3 cup water to the pot you boiled it in and reduce heat to medium. Add in the chicken and broccoli and cover and let cook until warmed through. 3. Stir in the Greek yogurt until smooth. If you want the sauce to be thinner, add in the remaining cooking water. 4. Let the mixture continue to simmer for about 5 minutes, stirring frequently and allowing to thicken. Once the mixture is hot, turn off the heat and stir in the shredded cheddar cheese!
