Combine sugar and yeast with warm water in a bowl, stir to dissolve, let sit for 5-6 minutes .
In a mixing bowl, combine flour mixture with yeast mixture, mix for 10 minutes. Add Matcha mixture. (I used Kitchen Aid stand machine with dough hook attachment, you can also knead the dough on a floured surface, knead it for about 10 minutes until elastic).
Place the dough on oiled bowl, cover with moist napkin, allow to rice for one hour.
Turn the dough out onto a lightly floured surface and divide into eight pieces.
Shape into a ball and make a hole in the center with your finger, allow them to rest for 10 minutes.
Boil water in a pot, place them into a pot of boiling water (they should float).
Cook for one minute each side, then remove to prepared baking sheet, sprinkle with sliced almonds on top.
