Ingredients

  • 3 pounds ground beef
  • 1 cup old fashioned or steel-cut oats
  • 1/2 cup flaxseed meal
  • 1/2 cup shredded parmesan cheese
  • 1/3 - 1/2 cup chopped green onion
  • 2 large eggs
  • 1 tablespoon paprika
  • 2 teaspoons salt
  • 2 teaspoons garlic powder
  • 1 1/2 teaspoon black pepper
  • 1 large can (15 ounces) tomato sauce
  • 1/4 cup Braggs Liquid Aminos, or low sodium soy sauce
  • 1 cup chicken or beef stock
  • 2 teaspoons paprika
  • 1 teaspoon salt
  • 1 teaspoon garlic powder
  • 1/2 teaspoon black pepper

Directions

  • In a large bowl combine all meatball ingredients. With (clean) hands, get in there and mix that beautiful mess all up. Once fully mixed take a large amount and form into a ball. I shoot for a little smaller than a baseball. The trick is to get your meatballs all relatively the same size to ensure even cooking. Place meatballs in a large baking dish prepared with nonstick cooking spray. In a large bowl mix together tomato sauce, Liquid Aminos, broth, and seasonings. Pour over meatballs. Cover pan with foil and bake at 400 for 30 minutes. Then remove foil and bake for an additional 20 minutes until browned on top and cooked throughout.
