Easy, 30-minute, one-skillet meal with smoked turkey sausage, fluffy white rice and flavorful veggies

Ingredients

  • 2 tablespoons olive oil, divided
  • 1 package (14-ounces) Skinless Smoked Turkey Sausage, cut into 1/2-inch slices
  • 1 yellow onion, diced
  • 1 green bell pepper, diced
  • salt and fresh ground pepper, to taste
  • 2 garlic cloves, minced
  • 1-1/2 cups low-sodium vegetable broth
  • 2 cups MinuteĀ® White Rice (you can also use Brown Rice)
  • fresh parsley, for garnish

Directions

  • Heat 1 tablespoon olive oil in a large skillet.
  • Add sausage to skillet and cook over medium-high heat for 5 minutes, or until nicely browned, stirring frequently.
  • With a slotted spoon, remove sausages from skillet and set aside.
  • Add remaining olive oil to the skillet.
  • Stir in onions and green pepper; season with salt and pepper and continue to cook for 4 minutes, stirring occasionally.
  • Add garlic and continue to cook for 1 more minute.
  • Pour in vegetable broth and bring to a boil.
  • Stir in rice and previously prepared sausage.
  • Turn down the heat to medium-low, cover with a lid and cook for 5 minutes.
  • Remove from heat and stir.
  • Garnish with parsley and serve immediately.
