Cinnamon, oatmeal cake topped with a delicious coconut, nut topping that is buttery and delicious. Easy to make and the flavor combination is terrific.

Ingredients

  • 1½ cups boiling water
  • 1 cup quick oats
  • ½ cup butter or margarine
  • 2 eggs, beaten
  • 1 cup brown sugar
  • 1 cup granulated sugar
  • 1 tsp vanilla
  • 1 tsp baking soda
  • 1 tsp cinnamon
  • ¼ tsp nutmeg
  • 1⅓ cup all-purpose flour
  • For the Frosting
  • ½ cup butter
  • ½ cup granulated sugar
  • ¼ cup evaporated milk or cream
  • 1 cup chopped nuts, walnuts or pecans
  • 2 cups shredded coconut
  • 1 tsp vanillla

Directions

  • Preheat oven to 350 degrees and grease and flour a 9x13 pan
  • in a mixing bowl combine boiling water, quick oats, and ½ cup butter. Let set until butter is melted
  • Add beaten eggs, brown sugar, granulated sugar, vanilla, baking soda, cinnamon, nutmeg and flour. Mix well.
  • Pour mixture into prepared 9x13 pan and bake at 350 degrees for 30-35 minutes or until toothpick in center comes out clean.
  • When cake is finished prepare frosting by:
  • Cooking the ½ cup butter, ½ cup sugar and evaporated milk or cream until it thickens (I use a small sauce pan and cook it on medium high heat)
  • Once mixture is thickened add vanilla, nuts and coconut. Pour onto cake and spread it evenly over the cake.
  • Turn oven to Broil and broil the cake until topping is nice and toasty looking.
  • Serve warm or cooled. Taste delicious either way.
