Ingredients

  • 3 cups all-purpose flour
  • 1 1⁄2 teaspoons salt
  • 1 1⁄2 teaspoons baking powder
  • 2 1⁄2 cups sugar
  • 1 1⁄2 cups whole milk
  • 1 cup vegetable oil
  • 3 large eggs
  • 2 tablespoons orange zest
  • 1 1⁄2 teaspoons vanilla extract
  • 1⁄4 teaspoon ground cardamom
  • Orange Glaze (recipe follows)
  • 2 cups confectioners’ sugar
  • 1 teaspoon orange zest
  • 1⁄3 cup fresh orange juice

Directions

  • Preheat oven to 350°. Spray 2 (8x4-inch) loaf pans with nonstick baking spray with flour. Set aside. In a medium bowl, sift together flour, salt, and baking powder. Set aside. In another medium bowl, beat sugar, milk, oil, eggs, zest, vanilla, and cardamom at medium speed with an electric mixer until well combined. Gradually add flour mixture, beating until smooth. Divide batter evenly between prepared pans. Bake 30 minutes. Loosely cover with aluminum foil, and bake until a wooden pick inserted in center comes out clean, approximately 30 minutes more. Let cool in pans 10 minutes. Remove from pans, and let cool completely on a wire rack. Drizzle with Orange Glaze.
  • In a medium bowl, stir together confectioners’ sugar and orange zest and juice until smooth.
