- 1 cup Green pepper
- 1/2 cup Red onion

- 1 cup Mayonnaise

Snacks
- 1 (10 1/2 ounce bag Fritos chili cheese corn chips

Dairy
- 2 cups Cheddar cheese, grated

This is a super yummy, easy salad to quickly throw together for any occasion! It is also a popular fare, but dont be fooled by the name salad as it isnt low in fat or calories - but an occasional indulgence from Paula Deen hasnt hurt anyone 😉

Ingredients

2 (15 ounce) cans whole kernel corn, drained
2 cups grated cheddar cheese ( I used marble cheddar)
1 cup mayonnaise
1 cup green pepper, chopped (I used an orange bell pepper instead that I got for .25 on this weeks shopping trip)
½ cup red onion, chopped
1 (10½ ounce) bag coarsely crushed Fritos chili cheese corn chips

Directions

Mix first 5 ingredients and chill. Stir in corn chips just before serving.

Serves: 8 - 10
