A simple and healthy way to enjoy carrots!

Ingredients

  • 1 lb organic baby carrots
  • 2 Tbsp balsamic vinegar
  • 1 Tbsp honey
  • 1 Tbsp olive oil
  • minced fresh parsley for garish (optional)

Directions

  • Preheat oven to 400F.
  • Spray a baking dish with coconut oil spray and set aside.
  • In a bowl, combine the vinegar, honey, and olive oil. Add the carrots and toss together.
  • Place carrots in baking dish and pour over any remaining sauce.
  • Bake in preheated oven for 35 - 40 minutes, stirring once, until carrots are tender and caramelized.
  • Garnish with parsley and serve.
