    • 2 tsp Basil, dried
    • 3 large cloves Garlic
    • 1 Onion, medium
    • 1 tsp Oregano, dried
    • 2 14.5 oz cans Tomatoes, fire-roasted
  • Canned Goods

    • 3 cups Chicken stock
    • 2 tbsp Tomato paste
  • Baking & Spices

    • 1/2 tsp Black pepper
    • 1 12 oz jar Red peppers, roasted
    • 1 1/2 tsp Sea salt
  • Dairy

    • 3 tbsp Butter
    • 8 oz Gouda cheese, smoked
    • 1/2 cup Heavy cream

Directions

  • Heat slow cooker on low setting.
  • To the slow cooker, add tomatoes, roasted red peppers, chicken stock, tomato paste, basil, sea salt, oregano, and black pepper.
  • In a medium sauté pan, over medium heat, sauté onion and garlic in butter until soft and translucent.  - About 10 minutes.
  • Add Sautéed onions to the slow cooker, cover and cook on low for 4 hours.
  • After 4 hours, transfer soup to a blender and puree until smooth. This can also be done using an immersion blender. (This is the one I have.)
  • Pour the pureed soup back into the slow cooker.
  • To the slow cooker, stir in heavy cream and Gouda cheese.  Cover and cook for 1 additional hour.
