Ingredients

  • 1lb bag of carrots, peeled & sliced
  • 2 parsnips, peeled & sliced
  • 1 bag frozen brussel sprouts, thawed
  • 1 tbsp dried rosemary
  • 1 tbsp dried thyme
  • 1 tbsp dried oregano
  • 1 tsp dried basil
  • salt & pepper to taste

Directions

  • Preheat oven to 400 degrees Fahrenheit
  • Prepare a large baking sheet with parchment paper
  • Add all vegetables to baking sheet
  • Spray with cooking spray
  • Add spices, salt & pepper evenly to vegetables
  • Bake 35-40 minutes stirring the vegetables half way through
  • Remove from the oven & serve promptly
