Ingredients

  • 2 - 6oz bags of Mountain Mombo® Seed & Fruit Mix**
  • 2 tablespoons chia seeds
  • 2 tablespoons ground flaxseed
  • 1/4 teaspoon salt
  • 1/2 cup honey
  • ** These bars can also be made with Beach Bash®. If you use Beach Bash®, decrease your Seed & Fruit mix by 1/4 cup and add in 1/4 cup Enjoy Life Chocolate Chips. The chocolate chips not only add flavor, but they also help the bars bind together (when they melt from the hot honey).

Directions

  • Line a 9X9 square baking pan with parchment paper. Spray the parchment paper with oil and set aside (this prevents sticking).
  • In a large mixing bowl, stir together the Seed & Fruit Mix, chia seeds, ground flaxseed, and salt; set aside.
  • In a small saucepan over low heat, heat the honey (stirring constantly) until it is simmering and starts to foam. Remove the pan from the stove and let it sit for 2-3 minutes.
  • Pour the hot honey over the dry mix and stir until well combined. The mix will be sticky due to the honey and melting chocolate chips and will start to harden as it cools. Spoon the mix evenly into your prepared baking dish. Using another piece of parchment paper, or wax paper, press down until the mix is even and firm.
  • Let the bars come to room temperature and then move them to the refrigerator for an hour. The cooler temperatures will help the honey and melted chocolate solidify. After an hour, pull the parchment paper holding the bars out of the pan and place it onto a cutting board. Using a sharp knife, cut the square into 10-12 bars. Wrap them up individually for lunch boxes or place them in an airtight container. Store in the refrigerator for up to one week or in the freezer for a month.
