Soft Chocolate Cookies with White Chocolate Chips

Ingredients

• 2 cups butter
• 2 cups white granulated sugar
• 2 cups light brown sugar
• 1 cup cocoa powder
• 4 eggs
• 2 teaspoons baking soda
• 2 teaspoons salt
• 4½ cups flour
• 2 tablespoons vanilla extract
• 11 oz. bag of white chocolate chips

Directions

• Preheat oven to 375.
• Line two cookies sheets with wax paper.
• In a standing mixer, cream the butter, granulated sugar, and brown sugar.
• Add cocoa powder, vanilla and eggs, mix on medium until well combined.
• While mixing on low, slowly add in the flour, baking soda and salt. Stop mixing as soon as the flour is just incorporated. Dont over mix!
• Fold in the chocolate chips with a spatula.
• Scoop 2-tablespoon-sized cookie dough balls onto the cookie sheets.
• Bake for 9 mins.
• Let cool on a cookie rack.
