Ingredients

    • 1 lb Chicken
  • Produce

    • 1 Celery stalks
    • 1/4 Cu carrots
    • 1 Green pepper, red
    • 2 Onions, small
    • 1 Parsley and lovage
    • 2 Parsnips
    • 12 oz Potatoes
    • 15 oz Tomatoes
  • Canned Goods

    • 1 tbsp Vegeta or chicken bouillon cubes
  • Condiments

    • 1 Bors magic' or lemon juice
  • Pasta & Grains

    • 4 oz Angel hair pasta
  • Baking & Spices

    • 1/2 tsp Paprika
    • 1 Salt and pepper
  • Oils & Vinegars

    • 1 tbsp Olive oil

Ingredients

  • 1lb (400-500g) chicken
  • 1 tbsp olive oil
  • 1-2 tbsp Vegeta or chicken bouillon cubes
  • 2 parsnips
  • 2 small onions
  • ¼ cu carrots, sliced
  • 1-2 celery stalks, sliced
  • 1 green pepper or red, cubed
  • 12oz (350g) potatoes, cubed
  • 15oz (450g) tomatoes, cubed
  • 4oz (100g) angel hair pasta
  • ½ tsp paprika
  • parsley and lovage, loads
  • Bors Magic or lemon juice to taste
  • salt and pepper to taste

Directions

  • Clean and chop your chicken in pieces as little as you want them. I did not use the breast and drumsticks but you can throw inside the pot pretty much anything else, bones included. Add two parsnips to the pot (cleaned but whole), cover and let it cook on medium heat for 30 to 45 minutes and remove foam as needed. You can throw away the parsnips at the end of this time or you can just eat them, they taste like potatoes.
  • Clean and chop all the veggies the way you want and set them aside. Add a tbsp of cooking oil of your choice to a frying pan and saute the onion for 5 minutes.
  • After 5 minutes add carrots, celery, peppers and saute for another 5-10 minutes, When done, pour everything over the chicken. Add potatoes and keep cooking until they are done. maybe 10-20 minutes, depending how big you cut them.
  • When potatoes are almost done throw in the chopped tomatoes, angel hair pasta, salt, pepper, Bors Magic if you have any and a couple of tablespoons of Vegeta. If that got you all confused check the links in my post or use some lemon and those Knorr bouillon cubes if you have any. Cook until the pasta is done, maybe 10 minutes.
  • The soup pot has to be covered all the time you are cooking the thing (as a side note). When you are done, remove from heat, add chopped parsley and lovage, cover again and let it rest for 10- 15 minutes.
