    • 1/2 cup Brown sugar, organic
    • 10 tsp Cinnamon
    • 1 1/2 cup Flour, unbleached white
    • 2 tbsp Nutmeg
    • 1 cup Powdered sugar, organic
    • 1/2 tsp Salt, unrefined
    • 1 tsp Vanilla
    • 1/2 tsp Vanilla, real
    • 1 1/2 cup Whole wheat flour
  • Dairy

    • 12 oz Cream cheese, organic
    • 1 1/3 cup Pastured butter
    • 1/2 cup Raw milk
  • Prepared

    • 3/4 cup Sourdough starter, fresh

Ingredients

  • ½ Cup raw milk
  • ¼ Cup pastured butter
  • ½ Cup raw honey
  • ¾ Cup fresh sourdough starter
  • 1 Pastured egg
  • 1 Teaspoon vanilla
  • 1 ½ Cup whole wheat flour
  • 1 ½ Cup unbleached white flour
  • 1 Teaspoon cinnamon
  • ½ Teaspoon unrefined salt
  • 1 Teaspoon baking soda
  • 1 Teaspoon baking powder
  • ½ Cup pastured butter
  • 12 Ounces organic cream cheese
  • 1 Cup organic powdered sugar
  • ½ Teaspoon real vanilla
  • 2/3 Cup pastured butter,
  • ½ Cup organic brown sugar (Wholesome Sweeteners brand) or sucanat
  • 3 Tablespoons cinnamon
  • 2 Tablespoons nutmeg

Directions

  • Combine milk, butter, and honey in saucepan and heat until just melted.
  • Add mixture to fresh sourdough starter with egg and vanilla.
  • Sift together flour, cinnamon, and salt and mix it all together with wet ingredients to form sticky ball.
  • Knead dough for about 10 minutes on floured surface adding enough flour to the ball until it isn’t sticky (usually about a half cup)
  • Place in bowl covered with warm moist towel and place in warm place to rise (in the oven with the light turned on is great) It won’t rise much FYI.
  • After about 6 hours (enough time for sourdough to break down gluten) add baking soda and baking powder to dough ball and knead until incorporated.
  • Roll out dough into a rectangle about ¼ to ½ inch thick. Brush melted butter over dough.
  • Combine filling ingredients and spread over the dough, leaving ¼ inch on the edges plain.
  • Roll dough up length wise and cut into 8-10 rolls using unflavored dental floss.
  • Place rolls in greased 9X13 pan and let rise again for about 2 hours.
  • Preheat oven to 350 and bake for 20-25 minutes or until golden brown. Combine frosting ingredients and Frost!
