Ingredients

  • 1 cup organic raw cashews
  • 1 teaspoon organic coconut oil (melted/liquid)
  • 1 tablespoon nutritional yeast
  • 1/2 teaspoon organic chipotle powder
  • 1/4 teaspoon organic garlic powder
  • 1/4 teaspoon Himalayan pink salt

Directions

  • In a small bowl, add all the ingredients for the seasoning mix and stir together until well blended. Set aside. In a medium sized bowl, add the cashews and melted coconut oil and mix/toss together until all the cashews are covered with coconut oil. Sprinkle the seasoning mix onto the cashews and mix/toss again until all the cashews are covered with the seasoning mix. Transfer the cashews to a baking pan lined with parchment paper and bake at 250 degrees for 30 - 45 minutes, tossing them half-way through and taking care that they dont burn. They will be soft when immediately removed from the oven so let the cool off completely before serving. Enjoy!
