Ingredients

  • 2 (14.5 Oz.) Cans Chickpeas, Drained, Rinsed & Dried
  • 2 Tbsp. Parmesan Cheese (the powdered type...not shreds or shaved)
  • 2 TBSP olive oil
  • 1 Tsp. Dried Rosemary
  • ⅛ Tsp. Garlic Powder
  • ⅛ tsp cayenne pepper
  • Salt & Pepper to Taste

Directions

  • Line a cookie sheet with foil and preheat oven to 400 degrees
  • Pour drained, rinsed and dried chickpeas into a bowl
  • Drizzle with olive oil
  • Sprinkle with seasonings
  • Stir everything around a bit to coat everything evenly
  • Pour onto the foil and bake 30 to 40 minutes, shaking the pan around every 15 minutes or so to ensure even cooking. (for crispy roasted chickpeas, leave in longer. If you like them slightly more tender, cook them for less time)
  • Remove the pan from the oven and let them cool slightly before eating.
  • Serves: 2 to 3 cups
