  • 1 tablespoon extra virgin olive oil
  • 2 cans artichoke quarters, drained
  • 2 tablespoons unsalted butter
  • 1/2 cup diced yellow onion
  • 2 cloves minced garlic
  • 1/4 cup white whole wheat flour
  • 2 1/2 cups non-fat milk
  • 1/2 teaspoon kosher salt
  • 1/4 teaspoon black pepper
  • 1/3 cup plain Greek yogurt
  • 3/4 cup freshly grated Fontina, Gouda, mozzarella, or other similar, melty cheese
