Strawberry Wine Cake Truffles

Ingredients

• 1 Box Funfetti Cake Mix (or white cake mix of your choice)
• 2 cups strawberry-flavored wine or sparkling wine
• 3/4 cup vanilla frosting (I used pink)
• 1 16 ounce bag of candy melts
• Sprinkles, nonpareils, etc. for decorating

Directions

• Preheat oven to 350F and spray a 9 x 13 pan with cooking spray. Pour 1 1/2 cups of the wine into large bowl containing cake mix, and beat with spoon, whisk or electric mixer until well-combined. Pour the cake batter into the prepared pan and bake as directed on packaging. Set on cooling rack or in fridge and allow to cool completely. In a large bowl, crumble the cake and add frosting. Use mixer or hands to incorporate the frosting until well combined. Roll mixture into 1 tbsp sized balls and place on a cookie sheet lined with wax paper. You may need to use some extra flour to ensure that the cake balls do not stick to your hands or the paper. Place in freezer for 15 minutes to firm up. Remove from freezer and pinch each ball with a fork. Gently dip the balls into remaining wine to help incorporate the flavor and place back in freezer for 15 minutes. While cake balls are cooling, melt chocolate according to package instructions, using microwave or melting pot. Using a spoon, take one chilled cake ball at a time and carefully place in the melted chocolate. Spoon chocolate over the cake ball to coat and place back on wax paper. Cover with desired decorations. Chill in refrigerator until serving.
