Swedish Christmas Braid

Ingredients

  • 2¾ cup bread flour
  • 1 package yeast (2¼ teaspoons)
  • 1 tsp ground cardamom
  • ¾ cup whole milk
  • ⅓ cup organic sugar
  • ¼ cup unsalted butter
  • ½ teaspoon salt
  • 1 egg

Directions

  • In a mixing bowl for a stand mixer, combine yeast, ¾ cup fo flour, and cardamom.
  • In a small sauce pan (or the microwave) heat the milk, butter, and sugar until warm. Stir together.
  • Add the milk mixture to the dry mixture, and mix on low for 30 seconds. Add egg. Beat for 3 min at medium speed.
  • Slowly add the remaining flour to make a soft dough (use only what you need of the remaining flour). Mix between additions to make sure you dont put in too much flour.
  • Using a dough hook, mix until the dough is smooth and pulls away from the side of the bowl.
  • Cover the mixing bowl with a towel and put in a warm place to rise until doubled. This takes almost an hour.
  • Punch down dough. Place the dough onto a floured surface, and cut into 3 sections with a pastry cutter. Let rest for 10 min.
  • Cover a cookie sheet with parchment paper.
  • Roll the sections into 3 ropes (16 long) and braid loosely on the parchment paper-covered cookie sheet. You can start in the middle and work out to each end, or start one end and braid to the other end. When youre finished, tuck the ends under the braid.
  • Cover the braid with a towel and let rise again until double in size.
  • Bake at 375 for 18-20 minutes.
